Ingredients
- 2 1/4 cup of all-purpose flour (300 grams)
- 1 1/4 cup sugar (280 grams)
- 3 tsp of baking powder
- Zest and pulp of a large orange (3/4 cup)(180 ml)
- 1/2 cup (110 ml) olive oil/sunflower/grapeseed oil
- 3 large eggs at room temperature
- 5 tablespoons of sliced almonds (40 grams)
- Loaf pan 10 inches by 4 inches (25 cm by 10 cm)
Instructions
- Zest the orange, peel removing all the pith. Chop in a food processor until smooth. You should have about 3/4 cup.
- In a large bowl, add the eggs and sugar and with an electric mixer until light and frothy.
- Slowly add the oil and keep mixing until well incorporated.
- Now add the orange juice.
- Sift in the flour, baking powder, and on low speed mix well until you have a smooth batter.
- Pour the batter In a greased loaf pan lined on the bottom with parchment paper. Sprinkle the sliced almonds evenly on top.
- Bake at 325 degrees Fahrenheit (160 degrees Celsius) for an hour.
