Ingredients
- 2 lbs of strawberries (900 grams)
- 1 2/3 cups plus a tablespoon sugar
- 1 lemon
- 2 cups heavy cream (480 ml)
- 1 lb mascarpone cheese (450 grams)
- 3 single packs of savoiardi
- 1/4 pound piece of white chocolate
- 1/4 cup Sweet liqueur (optional)
- 2 cups water (480 ml)
- 10 inches by 7 inches by 3 inches dish
For the syrup
- 1 lb of strawberries
- 1 cup of sugar
- Zest of a lemon
- Juice of a 1/2 lemon
- 2 cups of water
For the cream
- 2 cups heavy whipping cream
- 1 lb of mascarpone cheese
- 2/3 cups of sugar divided
Instructions
For the Syrup
- In a medium sauce pan combine the strawberries, water, sugar and juice/zest of a lemon
- Bring to a boil and lower heat to simmer for about 25 minutes.
- Skim the foam on top if needed.
- Strain in a colander and retain the syrup to cool.
- The strawberries can eaten over ice cream or yogurt.
- Cut the rest of the strawberries retaining a few uncut to decorate.
- Add 1 tablespoon of sugar and the juice of 1/2 lemon.
- Set aside until ready to assemble.
For the cream
- Add half of the sugar in the whip cream and whip until stiff peaks form.
- In the mascarpone add the rest of the sugar and whip until soft and creamy.
- On low speed combine whipped cream to the mascarpone until light and fluffy.
- Now ready to assemble.
Putting it all together
- Start by adding a thin layer of cream on the bottom.
- Now dip savoiardi one by one in the syrup and line them flat to create a layer.
- Add the cut up strawberries and shredded chocolate.
- Top with more cream.
- Again with dipped savoiardi and strawberries.
- Finish top layer with cream.
- Decorate with strawberries and grate chocolate on top.
