Add water, yeast and salt to a stand up mixer with hook attachment. Start mixing and very slowly add the flour. Mix for 25 minutes. Dough should be very soft.
Divide dough in equal parts and create individual dough balls.
Let them rise in the refrigerator for 24 hours.
Before stretching let dough sit at room temperature for an hour.
