Ingredients
  

  • 2 lbs to 2.5 lbs about 4 large sweet potatoes(900 gr to 1200 grams)
  • 10 0z small marshmallows (238 grams)
  • 2 oz of butter (1/2 stick) (55 gr) melted
  • 1 1/2 cups Orange juice freshly squeezed (360 ml) about 3 oranges
  • 1/3 cup maple syrup
  • 3 tablespoons sugar in the raw/brown sugar (35 grams)
  • 1 tsp cinnamon
  • 1/8 to 1/4 tsp nutmeg
  • 1/2 tsp salt

Instructions
 

  • Rinse the potatoes, peel and cut in half long ways.
  • Place in a baking casserole.
  • Juice the oranges and you should have about 1 1/2 cups. Add the sugar, maple syrup, salt, cinnamon, nutmeg and melted butter. Stir to combine.
  • Pour over the potatoes and bake covered at 375 degrees Fahrenheit (190 degrees Celsius).
  • Halfway through remove from the oven and turn the potatoes. Continue cooking until soft and liquid has thickened to a syrup.
  • Remove from oven. Add marshmallows and bake for just a few minutes on 500 degrees Fahrenheit (260 degrees Celsius)
  • Please please be careful because the marshmallows burn quickly.
  • Serve and eat hot! Happy holidays to all!
