Spatchcock Marinated Grilled Chicken

Ingredients
- 1 whole chicken spatchcocked
- 2 cups pineapple juice
- 2 tsp ancho peppers powder
- 1 tsp cumin powder
- 1 tsp sweet paprika
- 1 tsp oregano
- 2 tsp salt
- 2 tsp garlic powder or 2 cloves garlic creamed with a little salt
- Fresh cracked black pepper
Instructions
- In a large plastic bag or bowl combine all ingredients. Place the chicken in and let it marinate at least 12 hours.
- Remove chicken and pat it dry.
- Grill on barbecue at 375°F (190°C) for about an hour.
- Use a meat thermometer to check that the thickest part of chicken has reached 165°F.Enjoy!!
