  • 2 Large Eggplants ( total weight 3 lbs or 1.300 grams) or more
  • 8 large cloves of garlic sliced
  • 2 Tsp dried oregano
  • 3 Long dried red chilies or 1 tsp crushed red pepper
  • Extra virgin olive oil
  • 2 Medium mason jars
  • 1 Cup of Salt
