Ingredients
  

  • 1 Head of cauliflower
  • 4 Eggs
  • 1/2 cups Pecorino Romano (65g)
  • 1 Clove of garlic (optional)
  • 3/4 to 1 cup Flour (100 g to 140 g)
  • 1 bunch Fresh parsley
  • Fresh basil
  • Salt
  • Fresh cracked black pepper
  • 2 Cups Oil for frying (480 ml)

Instructions
 

Main Directions

  • Fill a large pot (needs to fit the whole cauliflower) with about 3 inches of water and bring to a boil. Sit there cauliflower stem down in it. Cover and let it cook until tender. 10 minutes or so.
  • Remove from water and let it cool completely then remove stem, break it to small florets.
  • In a large bowl whisk eggs then cheese, minced garlic, parsley, basil, salt and lots of black pepper. Whisk all together. Add the cauliflower and incorporate half of the flour. Continue adding flour until you have a thick batter and not runny.

Baked version

  • On a parchment lined cookie sheet scoop a large scoop of mixture and bake at 375°F(190°C) about 15 minutes.

Fried version

  • Bring the oil to 350°F (180°C) I love using a large ice cream spoon to scoop batter into oil.
  • Fry until golden brown and serve immediately!
