In a large bowl add flour, salt, and baking powder (if you’re using the Pan Degli Angeli vanilla add it now, if you’re using the liquid add it to wet ingredients)with a whisk stir to mix and incorporate air. Set aside.
In a large bowl add 4 eggs, sugar, and butter. With a handheld mixer beat until sugar is dissolved and it’s well mixed.
Add the dry ingredients to the wet and with a spatula mix gently to form a dough.
Move to the work surface, sprinkle with flour, and work gently for a few minutes until you have a smooth dough.
Place in a bowl and let it rest in the refrigerator for about 30 minutes.
Roll dough to about 1-inch logs and cut about 6 inches long. Shape like an S and place on a cookie sheet lined with parchment paper.
Gently flatten the cookieS with your fingers and brush with the egg that has been beaten.
Bake at 350 degrees Fahrenheit (180 Celsius) for about 18 to 20 minutes until golden.
