Ingredients
- 2 pounds of ravioli fresh or frozen (900 grams)
- 1 lb fresh mozzarella cheese (450 grams)
- 1 large sweet onion
- 2 tomatoes
- 2 yellow/red/orange pepper
- 1/2 cup pitted olives
- Small bunch of fresh basil
- 1/4 extra virgin olive oil
- Salt to taste
- Salt to add to water for boiling the ravioli.
- Fresh cracked black pepper to taste
Instructions

1. In a large pot filled with cold water add salt and bring to a boil on high heat.

2. Once it boils add your ravioli and follow cooking instructions on the package.

3. Cut in small cubes all the vegetables and put in a large mixing bowl.

4. Cut your mozzarella in small cubes and set aside.

5. Once ravioli is cooked drain and let them cook off but not completely.

6. Add to your vegetables and combine them.

7. Now add your mozzarella and extra virgin olive oil and mix until all combine.

8. Add a little salt if needed and a good cracking of black pepper.

9. Garnish with fresh chopped basil and serve warm.
