Ingredients

  • Mixing Bowl
  • Knife
  • Spoon
  • Fork

INGREDIENTS

  • 1 can Cannellini Beans, chickpeas/garbanzo and red kidney beans. 15.5 oz (439 grams)
  • 1 medium Red onion chopped.
  • 10 oz Cherry Tomatoes 285 grams
  • 1/4 cup Extra virgin olive oil 59 ml
  • 4 tbsp Red Wine Vinegar/White Vinegar/Apple cider Vinegar.
  • 1/4 cup Kalamata & green olives Based on your preference
  • 10 leaves Fresh Basil chopped.
  • 5 sprigs Fresh Parsley (Chopped)
  • 2 Green chili peppers chopped.
  • 1/2 cup Pickled eggplants Please check my other video tutorial on "How to pickle eggplant".
  • Salt and Fresh Cracked Black Pepper to taste.

Instructions

  • 1. Rinse the beans under running cold water and drain in a colander.
  • 2. In a large bowl combine all the ingredients.
  • 3. Add salt and pepper to your taste.
