INGREDIENTS
- 1 can Cannellini Beans, chickpeas/garbanzo and red kidney beans. 15.5 oz (439 grams)
- 1 medium Red onion chopped.
- 10 oz Cherry Tomatoes 285 grams
- 1/4 cup Extra virgin olive oil 59 ml
- 4 tbsp Red Wine Vinegar/White Vinegar/Apple cider Vinegar.
- 1/4 cup Kalamata & green olives Based on your preference
- 10 leaves Fresh Basil chopped.
- 5 sprigs Fresh Parsley (Chopped)
- 2Â Green chili peppers chopped.
- 1/2 cup Pickled eggplants Please check my other video tutorial on "How to pickle eggplant".
- Salt and Fresh Cracked Black Pepper to taste.

1. Rinse the beans under running cold water and drain in a colander.
