Ingredients

  • 1 can each of 15.5 oz(439 grams) -Cannellini Beans, chickpeas/garbanzo and red kidney beans.
  • 1 medium red onion chopped.
  • 10 oz Cherry Tomatoes (285 grams).
  • 1/4 cup Extra Virgin Olive Oil (59 ml).
  • 4 tbsp Red Wine Vinegar/White Vinegar/Apple cider Vinegar.
  • Kalamata & Green olives.
  • Radishes(optional).
  • 10 leaves of fresh Basil chopped.
  • 5 sprigs of fresh Parsley (Chopped).
  • 2 green chili peppers chopped.
  • 1/2 cup of pickled eggplants (Please check my video tutorial on YouTube).
  • Salt and Fresh Cracked Black Pepper to taste.

Instructions

  • 1. Rinse the beans under running cold water and drain in a colander.
  • 2. In a large bowl combine all the ingredients. Add salt and pepper to your taste.
  • It’s a perfect summer meal served over Friselle bread or as a side dish.
