Ingredients

Filling ingredients:-

  • 5 8oz Cream cheese bars (2 kilos 250 grams)
  • 1 1/4 cup sugar (285 grams)
  • 2 tbsp flour
  • Vanilla-1 bustina
  • 3 large eggs or 4 medium

Crust ingredients:-

  • 2 cups Graham crackers crumbs(210 grams)
  • 1/3 melted butter(75 grams)
  • 3 tbsp sugar(45 grams)

Topping ingredients:-

  • 1 ib sour cream (450 grams)
  • 3 tbsp sugar (45 grams)

Cherry sauce topping ingredients:-

  • 1 1/2 to 1 3/4 ibs pitted cherries
  • 1 cup water
  • 2/3 cups Sugar (135 grams)
  • Juice of half a lemon
  • Zest of a lemon
  • tbsp corn starch

Instructions

Direction for Crust:-

  • Mix well until crumbs form when pressed and press firmly into a 9 or 10-inch springform-chill at least 1 hour.

Direction for Topping:-

  • Soften cream cheese and add sugar, beat well, then add the eggs, vanilla, and flour. Do not overbeat.
  • Preheat oven at 450 and bake cheesecake for 10 minutes, lower to 200 and bake for 45 minutes.
  • Mix the 3 tbsps of sugar in the sour cream and beat really well, until smooth.
  • Pour evenly over the cheesecake and bake another 20 minutes at 200 degrees.
  • Shut the oven off and let it sit for 1 hour in the oven.
  • Then refrigerate overnight.

Direction for Cherry sauce topping:-

  • Combine all the ingredients but only half of the zest. In a medium saucepan cook on medium heat for about 20 minutes. Add the rest of the lemon zest. Cool in the fridge until ready to serve over the cheesecake.
  • You can also use yogurt, ice cream, or pancakes. It really is delicious.
