Chianti Braised Beef Stew

Ingredients

  • 2 lbs beef chuck cut in cubes
  • 3 cups of Chianti wine 
  • 2 tablespoons extra virgin olive oil 
  • 2 bay leaves 
  • 2 sprigs of rosemary 
  • 1 cup boiling hot water 
  • Few dry porcini mushrooms 
  • 2 chopped garlic cloves
  • 1 large onion chopped (1 cup) 
  • 1 large celery stalk chopped (2/3 cup)
  • 2 carrots chopped (2/3 cup)
  • Fresh cracked black pepper to taste 
  • Salt to taste 

Instructions

  • In a cup of boiling water add the porcini mushrooms. Set aside until ready to use.
  • Coat the meat evenly with salt and black pepper.
  • In an oven safe pot add oil and on high heat add the meat cubes and sear on all sides.
  • Add the onion, celery, garlic, rosemary, bay leaves and carrots.
  • Stir for about 5 minutes and then add the wine and bring to a boil.
  • Add the porcini mushrooms water and the porcini, then add more wine to cover the meat.
  • Cover and bake at 350 degrees Fahrenheit (180 Celsius) for about 3 hours or until meat falls apart.
