Ingredients
- 2 lbs beef chuck cut in cubes
- 3 cups of Chianti wine
- 2 tablespoons extra virgin olive oil
- 2 bay leaves
- 2 sprigs of rosemary
- 1 cup boiling hot water
- Few dry porcini mushrooms
- 2 chopped garlic cloves
- 1 large onion chopped (1 cup)
- 1 large celery stalk chopped (2/3 cup)
- 2 carrots chopped (2/3 cup)
- Fresh cracked black pepper to taste
- Salt to taste
Instructions

In a cup of boiling water add the porcini mushrooms. Set aside until ready to use.

Coat the meat evenly with salt and black pepper.

In an oven safe pot add oil and on high heat add the meat cubes and sear on all sides.

Add the onion, celery, garlic, rosemary, bay leaves and carrots.

Stir for about 5 minutes and then add the wine and bring to a boil.

Add the porcini mushrooms water and the porcini, then add more wine to cover the meat.

Cover and bake at 350 degrees Fahrenheit (180 Celsius) for about 3 hours or until meat falls apart.
