Calamari con Insalata di Arance e Finocchio.

Ingredients
To boil Calamari :
2 Bay leaves
1 tbsp Peppercorns
3 slices Lemon
For Salad:
2-3 lbs. Calamari (1 kg to 1.5 kg)
2 Fennel bulbs
3 Oranges
1/4 cup Extra virgin olive oil
1/2 cup Chopped walnuts (50 g)
Juice of a lemon
Salt and pepper to taste

In a large pot filled with water add the lemon slices, peppercorns and Bay leaves. Bring to a boil, add the whole cleaned calamari and let it boil approximately 5 to 8 minutes. Until fork tender. Drain and let them cool completely.

In a large bowl combine the cut trimmed cut fennel and the cubed oranges. Using a scissor cut calamari into round and plays in the bawl too. Salt and pepper to taste.

In a measuring cup, measure the oil. Add the lemon juice and whisk until creamy. Combine to the salad and mix until well coated. Refrigerate at least eight hours before serving. Garnish with orange slices, lemon slices and fresh parsley. Enjoy this healthy and delicious calamari salad.
