Neapolitan Caponata with frisellina/wheat biscuit/bread (Panzanella)

Ingredients

  • (For 4 people).
  • 3 large Tomatoes
  • 1/4 tbsp Extra virgin olive oil or more
  • 2 cloves Garlic
  • 16 Green Castelvetrano pitted olives
  • Frisellina/wheat biscuit/day old bread
  • Fresh Basil
  • Salt per your taste

Instructions

  • Purée the ripest tomato in a food processor until smooth in consistency. Pour in a large serving bowl and adjust salt.
  • Slice the tomatoes and add it to purée.
  • Cut bred or break the frisellina/wheat biscuit to bite size pieces.
  • Add all ingredients to the purée.
  • Let it sit for 30 minutes before serving.
  • Buon Appetito!
