Neapolitan Pizza Dough

Ingredients

  • 4 1/4 cups Water (1 liter) room temperature
  • 1.6 kg Flour
  • 2 grams Fresh yeast (1/2 tsp )
  • 3 tbsp Salt (40 g)

Instructions

  • Add water, yeast and salt to a stand up mixer with hook attachment. Start mixing and very slowly add the flour. Mix for 25 minutes. Dough should be very soft.
  • Divide dough in equal parts and create individual dough balls.
  • Let them rise in the refrigerator for 24 hours.
  • Before stretching let dough sit at room temperature for an hour.
