Irish Soda Bread

Ingredients

  • 4 cups Flour (500 g)
  • 1 cup Sugar (200 g)
  • 2 Large eggs
  • 1 cup Milk (240 ml)
  • 4 tsp Baking powder
  • 1 pinch Baking soda
  • 1 stick Butter melted (112 g) (4 oz)
  • 1 cup Craisins/Raisins (160 g)
  • 1 tbsp Sugar in the raw

Instructions

  • (Preheat oven at 350°F (180°C).
  • Mix all ingredients, except butter. Then, add butter and mix to a smooth dough.
  • Scoop out making 2 round loaves on a parchment paper lined cookie sheet.
  • Sprinkle top with sugar in the raw. Bake for one hour.
  • Enjoy right out of the oven with Irish butter. Stores well for a few days.
