Orecchiette with Broccoli

Ingredients

  • 1 lb Orecchiette pasta
  • 1 lb Broccoli florets
  • 5 tbsp Extra virgin olive oil
  • 4 cloves Garlic sliced
  • 3 filet Anchovies
  • 1/2 tsp Red chili flakes You can add or remove as desired.
  • Pecorino Romano cheese as desired
  • Salt as desired

Instructions

  • Bring to a boil a large pot filled with water. Add salt and broccoli. Place lid on and bring back to a boil. Now add orecchiette and cook until al dente.
  • In a large sauté pan add oil, garlic, anchovies and chili flakes. Sauté on medium heat careful not to burn garlic. Add a ladle of pasta water to stop frying.
  • Remove pasta and broccoli and add directly to sauté pan. Continue stirring and adding a ladle or more of pasta water.
  • Mix constantly until broccoli is all well incorporated with orecchiette creating a smooth creamy mixture.
  • Serve hot with lots of fresh grated Pecorino Romano cheese.
