Ingredients
Main Ingredients:
- Dough
- 2 cups Water
- 1 1/2 cups Flour
- 1/2 cup Sugar
- 1/4 tsp 1Salt
- 1/4 cup Olive oil (might not need it all)
- Zest of a lemon
- Zest of 1/2 orange or small mandarin
For Frying:
- 2 cups Oil for frying
For Glaze:
- 1 cup Honey
- 1 tbsp Sugar
- Orange Zest
- Sprinkles
Instructions

In a medium saucepan, bring water, sugar, citrus zest and salt to a boil. Lower heat to a minimum and add flour. Using a wooden spoon stir for a few minutes until dough forms and detaches from bottom of pan.

Let it cool for a few minutes. Grease hands and work surface with olive oil. Start kneading warm dough for a few minutes until it has achieved a shiny and no flour lumps. Add a little oil to hands and counter if it sticks. This is a very important process otherwise they explode while frying.

Now roll into long rolls about 1/2 inch thick and cut 6 inches long. Shape in a script letter shape pressing down where the 2 ends meet.

Bring oil to 350°F 180°C and fry them until golden.

In a pot melt honey, sugar and citrus peel. Bring to a boil for 2 minutes. You can individually roll each zeppole in honey or place them in a bowls and pour honey over.

Sprinkles on top and enjoy.

Like all fried foods best enjoyed within the day but I like them a little hard the next day dunked in my coffee reminiscing the joy of the holiday and the beauty in keeping the traditions going.
