Spaghetti Aglio e Olio Recipe -Spaghetti with Garlic and Olive Oil

Ingredients

  • 1 lb. Spaghetti
  • 5 tbsp. Extra virgin olive oil 
  • 3-5 cloves Garlic
  • 1 Red hot chili pepper or 1/2 tsp red chili flakes
  • 1 handful Walnut chopped
  • 1/4 cup Chopped fresh parsley
  • 1/2 cup Parmigiano Reggiano or Pecorino Romano 

Instructions

  • In a large pot filled with water add salt and bring to a boil.
  • Drop spaghetti and proceed in a large sauté pan by adding oil, garlic and chili pepper. (Careful not to burn the garlic by adding a ladle of pasta water).
  • Add the pasta under al dente to the oil and garlic and blend together by adding more pasta water (This process is called “mantecare”).
  • Add the cheese and continue to blend until it’s creamy.
  • Mix in the walnuts and lots of parsley.
  • Serve immediately
  • Buon appetito!
