Caprese Pasta Salad

Ingredients

  • 1 lbs. Pasta short type is best
  • 1/4 cup Extra virgin olive oil
  • 1 lbs. Colorful cherry tomatoes
  • 1 lbs. Burrata
  • 1 clove Fresh garlic
  • 1/2 CUP Fresh basil leaves
  • Salt as per desire
  • Cracked black pepper as per desire

Instructions

  • Fill a large pot filled with water. Bring to a boil. Add salt. Be generous with the salt. Add your pasta and drain al dente. Cool under cold water and drain. Set aside.
  • Combine basil ( retain some leaves for decoration)and garlic clove and using a mortar and pestle cream to a thin consistency like pesto.
  • Cut tomatoes in half and place in a bowl. Add the pesto, extra virgin olive oil, salt and pepper.
  • Cut the burrata and stir to combine. Add the cooled pasta.
  • Adjust the salt and pepper and serve.
  • Buon appetito!
