Ingredients

  • 1 lb cherries (450 g)
  • 1 cup plus 2 tablespoons all-purpose flour (150 g )
  • 3/4 cup potato starch (80 g)
  • 3/4 cup sugar (150 g)
  • 3 X-large eggs
  • 1/3 cup oil (80 ml) sunflower/grape seed/canola
  • 2 tsp baking powder(8g)
  • Zest of a lemon
  • 1 tsp vanilla extract

Bottom of springform

  • 3 tablespoons butter (40 g)
  • 4 tablespoons brown sugar (40 g)
  • 9 inch springform pan (23cm)

Instructions

  • Pit the cherries and cut them in half.
  • Place the springform pan on low heat, let the butter melt, and spread on the side. The remaining butter will melt at the bottom. Add the sugar and cook for a few minutes until it bubbles. Careful that the pan is not too hot.
  • Place the cherries cut side down. Start at the perimeter and work your way to the center.
  • Set aside until batter is ready.
  • In a large bowl combine sugar, egg, and vanilla. Use a handheld mixer to whip until you have a smooth batter. Slowly add the oil.
  • Combine flour, potato starch, baking powder, and salt. Sift and add to the egg mixture.
  • Continue mixing until you achieve a thick batter. Fold in the lemon zest. I usually do this manually otherwise the lemon threads get caught in the whisk attachment.
  • Bake at 350°F (180°C) for about 50 minutes.
