Ingredients
- 1 lb cherries (450 g)
- 1 cup plus 2 tablespoons all-purpose flour (150 g )
- 3/4 cup potato starch (80 g)
- 3/4 cup sugar (150 g)
- 3 X-large eggs
- 1/3 cup oil (80 ml) sunflower/grape seed/canola
- 2 tsp baking powder(8g)
- Zest of a lemon
- 1 tsp vanilla extract
Bottom of springform
- 3 tablespoons butter (40 g)
- 4 tablespoons brown sugar (40 g)
- 9 inch springform pan (23cm)
Instructions

Pit the cherries and cut them in half.

Place the springform pan on low heat, let the butter melt, and spread on the side. The remaining butter will melt at the bottom. Add the sugar and cook for a few minutes until it bubbles. Careful that the pan is not too hot.

Place the cherries cut side down. Start at the perimeter and work your way to the center.

Set aside until batter is ready.

In a large bowl combine sugar, egg, and vanilla. Use a handheld mixer to whip until you have a smooth batter. Slowly add the oil.

Combine flour, potato starch, baking powder, and salt. Sift and add to the egg mixture.

Continue mixing until you achieve a thick batter. Fold in the lemon zest. I usually do this manually otherwise the lemon threads get caught in the whisk attachment.

Bake at 350°F (180°C) for about 50 minutes.
