Spatchcock Marinated Grilled Chicken

Ingredients

  • 1 whole chicken spatchcocked
  • 2 cups pineapple juice
  • 2 tsp ancho peppers powder
  • 1 tsp cumin powder
  • 1 tsp sweet paprika
  • 1 tsp oregano
  • 2 tsp salt
  • 2 tsp garlic powder or 2 cloves garlic creamed with a little salt
  • Fresh cracked black pepper

Instructions

  • In a large plastic bag or bowl combine all ingredients. Place the chicken in and let it marinate at least 12 hours.
  • Remove chicken and pat it dry.
  • Grill on barbecue at 375°F (190°C) for about an hour.
  • Use a meat thermometer to check that the thickest part of chicken has reached 165°F.Enjoy!!
