Grilled Artichokes | Carciofi Veloci Arrostiti

Ingredients

  • 2 to 3 lbs. baby artichokes (900 g to 1300g)
  • 1 lemon
  • 1/2 cup extra virgin olive oil (120 ml)
  • 3 cloves garlic chopped
  • Small bunch fresh parsley
  • Salt
  • Fresh cracked black pepper

Instructions

  • Remove the outer leaves of the artichoke, cut the top off about 1/4 inch. Peel the stem and immerge in a large bowl filled with water and the squeezed lemon.
  • The lemon helps the artichokes stay white. Use gloves while handling artichokes because they will stain your hands.
  • Fill a large pot with water add salt and bring to a boil. Blanch the artichokes for about five minutes or until tender. Drain and coat with olive oil. Grill on barbecue that on 375°F to 400°F. (190°C to 195°C) until golden on both sides.
  • Remove and mix with garlic, fresh parsley and oil.
  • Wonderful meal or side dish! Buon appetito!
