Paccheri with fresh TUNA in RED Cherry Tomatoes sauce

Instructions

  • Bring to boil a large pot with water and salt add your pasta. Boil just under al dente.
  • In a large sauté pan add oil, garlic and chili pepper sauté on medium heat and careful not to burn garlic.
  • Add tuna and stir. As it changes color add wine and let it evaporate.
  • Add the cherry tomatoes and basil. Let it cook for about 5 minutes. ( The tuna cooks quickly so time it with the cooking of the pasta). Retain a cup of pasta water.
  • Drain pasta and add to sauté pan. Stir for about a minute and add a little of the pasta water if needed.
  • Plate and garnish with basil.
  • Enjoy!
