How is ricotta made in Italy- I have put together my family recipe about it. I hope you make it and enjoy with your family and friends.

Ingredients

Ingredients for Pie crust/Pasta Frolla :-

  • 3 cups all purpose flour (400g)
  • 1/2 sugar (100g)
  • 1 stick melted butter (4oz ) or (112g)
  • 3 large eggs
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For Filling:-

  • 2 lbs. ricotta (900 g)
  • 1 cup sugar (200 g)
  • 4 large eggs
  • Zest of an orange
  • 3 oz Strega liqueur or you can substitute with a citrus fruit like limoncello
  • 1 cup mixed citron/cherries/candied orange slices (5.5 oz) (150 g)
  • 1 cup Bittersweet chocolate chips

Instructions

For Pie crust/pasta Frolla:-

  • Sift flour, baking soda and salt in a large bowl.
  • Add your sugar, eggs and butter, using your hand start mixing the wet ingredients with the dry until you have a smooth dough.
  • Wrap in plastic and let it rest in the refrigerator for at least 30 minutes.

For Batter :-

  • In a large bowl using a whisk, cream ricotta and sugar together.
  • Add remaining ingredients except chocolate chips.

For Assembly:-

  • Roll out dough to 1/8 of an inch thickness.
  • Cover a 10 inch springform pan that has been greased with butter. Trim the sides and use the trimmings to make another round.
  • Pour half of the mixture in the spring pan, add chocolate chips cover with remaining batter and top with more chocolate chips.
  • Use the round to cover pie. Trim all around and fold edges down. Prick top with a fork or knife. Bake at 350 °F or 180°C. Bake until a golden color about 1 1/2 hours.
