Spritz Cookies – Biscottini al burro – How to make spritz cookies.

Ingredients

  • 8 ounces butter (1 cup) (226 g) room temperature
  • 2 1/4 cups all purpose flour (300 g)
  • 3/4 cups sugar (150g)
  • 1 large egg room temperature
  • 1/2 tsp salt
  • 2 tsp pure vanilla extract
  • Gel food coloring (optional)

Instructions

  • In a large bowl cream the butter with sugar and salt until light and fluffy. You can use an handheld mixer or stand up mixer.
  • Add the egg and continue beating until fully incorporated. Add the vanilla and mix.
  • Slowly add a 1/4 of the flour and mix. Now slowly add the remaining flour but use a spatula to incorporate. You’ll get a soft dough that resembles children play-doh. You can divide dough and add food coloring for desired color.
  • Fill your cookie press as per instructions on your specific model. (Usually one press equals one cookie).
  • Press cookie on an unlined and non-greased cookie sheet. The dough needs to stick to sheet as you press them out.
  • Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 8 to 10 minutes. The edges should be slightly golden. Don’t overcook.
  • To decorate cookie you can lightly brush with corn syrup or maple syrup and add sprinkles.
