Ingredients
- 20 plus zucchini blossoms
- 4 cups all purpose flour (600 grams)
- 3 tsp Baking powder
- 1 1/2 cups water (360 ml)
- 2 large eggs
- 6 large basil leaves
- Salt to taste
- Black pepper to taste
- 2 cups oil for frying (480 ml)
Instructions

Rinse the zucchini blossoms, remove the pistil and stem. Set aside.

In a large bowl add flour, whisk to incorporate some air.

Add baking powder, salt, pepper and eggs.

Start whisking incorporating the flour creating a batter.

Add the water a little at a time until you have a thick batter.

Shred the blossoms with your hands and add in the batter. Add fresh chopped basil, mix and set aside.

In a deep pan add oil and bring to 350 degrees Fahrenheit (180 Celsius).

Using a tablespoon first wet in water and then scoop batter and gently add to the oil, continue but don’t overcrowd because zeppole will grow.

Once golden turn and cook on other side.

Remove on drain on paper towel, Sprinkle with sea salt and enjoy hot.
