Zucchini Blossom Zeppole

Ingredients

  • 20 plus zucchini blossoms
  • 4 cups all purpose flour (600 grams)
  • 3 tsp Baking powder
  • 1 1/2 cups water (360 ml)
  • 2 large eggs
  • 6 large basil leaves
  • Salt to taste
  • Black pepper to taste
  • 2 cups oil for frying (480 ml)

Instructions

  • Rinse the zucchini blossoms, remove the pistil and stem. Set aside.
  • In a large bowl add flour, whisk to incorporate some air.
  • Add baking powder, salt, pepper and eggs.
  • Start whisking incorporating the flour creating a batter.
  • Add the water a little at a time until you have a thick batter.
  • Shred the blossoms with your hands and add in the batter. Add fresh chopped basil, mix and set aside.
  • In a deep pan add oil and bring to 350 degrees Fahrenheit (180 Celsius).
  • Using a tablespoon first wet in water and then scoop batter and gently add to the oil, continue but don’t overcrowd because zeppole will grow.
  • Once golden turn and cook on other side.
  • Remove on drain on paper towel, Sprinkle with sea salt and enjoy hot.
