Ingredients
12 oz to 1 lb shishito peppers(300 to 453 grams)
1 lb cherry tomatoes (453 grams)
2 tablespoons extra virgin olive oil
3 cloves whole garlic
1 1/2 to 2 cups vegetable/canola/sunflower oil
Fresh basil
Salt to taste
Instructions

Rinse and dry peppers. Using a sharp knife remove the stem and seeds.

In a frying pan on medium heat bring the oil to 350 degrees.

Add peppers and don’t overcrowd. Fry until golden and remove.

Continue until all peppers are fried.

Using another frying pan add the extra virgin olive oil and the cloves of garlic. On medium heat let the garlic sauté until golden.

Add the fresh tomatoes and cook for about 10 minutes.

Add the fried shishito peppers. Adjust salt and fresh cut basil. Cook for an additional 5 minutes.

Save some basil leaves to decorate.

Makes a great side dish. Wonderful in a mozzarella sandwich or just as a vegan meal.
