Ingredients
- 2 1/4 cup of all-purpose flour (300 grams)
- 1 1/4 cup sugar (280 grams)
- 3 tsp of baking powder
- Zest and pulp of a large orange (3/4 cup)(180 ml)
- 1/2 cup (110 ml) olive oil/sunflower/grapeseed oil
- 3 large eggs at room temperature
- 5 tablespoons of sliced almonds (40 grams)
- Loaf pan 10 inches by 4 inches (25 cm by 10 cm)
Instructions

Zest the orange, peel removing all the pith. Chop in a food processor until smooth. You should have about 3/4 cup.

In a large bowl, add the eggs and sugar and with an electric mixer until light and frothy.

Slowly add the oil and keep mixing until well incorporated.

Now add the orange juice.

Sift in the flour, baking powder, and on low speed mix well until you have a smooth batter.

Pour the batter In a greased loaf pan lined on the bottom with parchment paper. Sprinkle the sliced almonds evenly on top.

Bake at 325 degrees Fahrenheit (160 degrees Celsius) for an hour.
