Ingredients

  • 2 1/4 cup of all-purpose flour (300 grams)
  • 1 1/4 cup sugar (280 grams)
  • 3 tsp of baking powder 
  • Zest and pulp of a large orange (3/4 cup)(180 ml)
  • 1/2 cup (110 ml) olive oil/sunflower/grapeseed oil 
  • 3 large eggs at room temperature 
  • 5 tablespoons of sliced almonds (40 grams) 
  • Loaf pan 10 inches by 4 inches (25 cm by 10 cm)

Instructions

  • Zest the orange, peel removing all the pith. Chop in a food processor until smooth. You should have about 3/4 cup.
  • In a large bowl, add the eggs and sugar and with an electric mixer until light and frothy.
  • Slowly add the oil and keep mixing until well incorporated.
  • Now add the orange juice.
  • Sift in the flour, baking powder, and on low speed mix well until you have a smooth batter.
  • Pour the batter In a greased loaf pan lined on the bottom with parchment paper. Sprinkle the sliced almonds evenly on top.
  • Bake at 325 degrees Fahrenheit (160 degrees Celsius) for an hour.
