Ingredients

For Cannoli shells

  • 2 cups all-purpose flour
  • 3 tablespoons shortening
  • 2 tablespoons of sugar
  • 2 yolks and 1 egg white
  • 1 egg white (will be used to seal cannoli dough)
  • 1/4 cup Marsala wine
  • 1 pinch salt
  • 1 pinch cinnamon
  • 2-3 cups of frying oil

For Cannoli cream:-

  • 15 ounces whole milk ricotta cheese (420 grams)
  • 1 cup confectioners sugar
  • Pinch of cinnamon
  • 1/4 tsp vanilla extract
  • 1/4 cup chocolate chips

To decorate:-

  • 1/4 chocolate chips
  • 1/4 crushed pistachios
  • Confectioners sugar for dusting

Instructions

For making cannoli shells:

  • In a food processor add all the dry ingredients, pulse a few times to mix. Add the shortening and pulse for a minute. Add the Marsala wine and eggs. Pulse for a minute until a dough form.
  • Move to a work surface and work for 3 to 4 minutes until smooth. Cover in plastic wrap and let it rest for 30 minutes.
  • Cut dough into 3 pieces and roll out one piece at a time. Cut circles of 2 1/2 inches for small cannoli, 3 3/4 inches for large cannoli.
  • Roll each circle with a rolling pin forming an oval shape.
  • Place the cannoli mold in the center and overlap middle and secure by wetting with egg wash and pressing down gently.
  • Once cannoli are all prepared in a small pot filled with oil bring to 350 degrees Fahrenheit. Gently add the cannoli in and fry for a minute or more until golden brown in color.
  • Remove and drain on a paper towel. Remove cylinder mold and cool completely before filling.

For making cannoli cream:-

  • In a mesh colander over a bowl add the ricotta and let it drain in the fridge for 24 hours. This is a must otherwise the cream will be runny.
  • With a handheld mixer whip the ricotta and slowly add the confectioners' sugar.
  • Add the cinnamon and vanilla.
  • Once the cream is light and smooth fold in the chocolate chips.
  • Refrigerate until ready to use.

For assembling cannoli:-

  • Use a piping bag with star attachment to fill the cannoli with the cream.
  • Gently dip ends of cannoli in chocolate chips or crushed pistachios.
  • To enjoy a perfectly crunchy cannoli only fill before serving. Sprinkle with powder sugar and enjoy!
