Ingredients

  • 2 cups all-purpose flour (250 grams)
  • 1/2 granulated sugar (100 grams)
  • 1 stick butter (4 ounces) (112 grams)
  • 1 egg
  • 1 1/2 tsp of baking powder (7 grams)
  • Zest of an orange
  • 4 tablespoons orange juice
  • 1 tsp vanilla
  • 1/8 tsp salt if you’re using unsalted butter
  • 1/4 cup granulated sugar (50 grams)
  • 1/2 cup powder sugar (50 grams)

Instructions

  • Add softened butter and sugar in stand up mixer with the paddle attachment.
  • Work until light and fluffy, add the egg. Let it get incorporated and add vanilla and orange juice.
  • Remove from the mixer and sift in flour and baking powder.
  • Move back to the mixer and at a slow speed let all the ingredients incorporate. It will form a soft, sticky dough.
  • Let it rest in the refrigerator for one hour or more.
  • In a bowl mix the granulated sugar and powder sugar.
  • With a tablespoon size ice cream scooper scoop out cookie dough and roll between your hands forming a ball.
  • Roll in the 2 sugar mixture and line one inch apart on a parchment paper-lined cookie sheet.
  • Bake at 350 degrees Fahrenheit (180 Celsius) for 15 minutes until lightly golden. Be Careful not to overcook.
  • Sprinkle the remainder of the sugar while the cookie is still hot.
