Ingredients
- 1 to 2 pounds of calamari (450 to 900 grams)to be cleaned
- 2 to 4 cloves of garlic chopped
- Juice of 1/2 lemon
- Fresh parsley
- Fresh cracked black pepper
- Extra virgin olive oil 1/4 cup
- Sea salt to taste
Instructions

Remove the inside of the calamari and peel off the skin. With scissors cut right below the eyes to free the tentacles. (As shown in the video).

Rinse and pat dry with a paper towel.

With a sharp knife make slits across each calamari.

Chop garlic and parsley. Add oil, lemon juice, and black pepper. Whisk with a fork.

Mix the calamari and some of the garlic/parsley mixture. It can sit and marinate for an hour or so.

Warm-up barbecue to 400 degrees Fahrenheit and place calamari on the grill for about 5 minutes on each side.

Plate and drizzle garlic/parsley mixture. Sprinkle a little sea salt.

Serve hot with crusty Italian bread.
