Step#1- In a medium saucepan add sugar and water, bring to a boil and keep stirring. Keep the flame on medium because you don’t want to burn the sugar.

Step#2- Once it turns golden color add almonds, cinnamon, and lemon zest.

Step#3- Continue stirring until the color turns a golden brown. Be very careful because it’s extremely hot.

Step#4- You can line a small cookie sheet with parchment paper and pour the mixture in (I gently grease the granite counter and pour it on).

Step#5- Cut the lemon in half and use the wet side to push down on the Torrone to give it shape.

Step#6- Help yourself with a knife or dough scraper. I usually form a 1-inch tall block rectangle.

Let it cool down completely and then cut in cubes or any shape you like.
