Ingredients
- 1 can each of 15.5 oz(439 grams) -Cannellini Beans, chickpeas/garbanzo and red kidney beans.
- 1 medium red onion chopped.
- 10 oz Cherry Tomatoes (285 grams).
- 1/4 cup Extra Virgin Olive Oil (59 ml).
- 4 tbsp Red Wine Vinegar/White Vinegar/Apple cider Vinegar.
- Kalamata & Green olives.
- Radishes(optional).
- 10 leaves of fresh Basil chopped.
- 5 sprigs of fresh Parsley (Chopped).
- 2 green chili peppers chopped.
- 1/2 cup of pickled eggplants (Please check my video tutorial on YouTube).
- Salt and Fresh Cracked Black Pepper to taste.
Instructions

1. Rinse the beans under running cold water and drain in a colander.

2. In a large bowl combine all the ingredients. Add salt and pepper to your taste.

It’s a perfect summer meal served over Friselle bread or as a side dish.
