Ingredients

  • 4 cups all-purpose flour (500 grams)
  • 2/3 cups sugar and a little more for rolling.
  • 2 cups honey (500 ml)
  • 1 tsp cinnamon
  • 1/4 teaspoon cloves powder
  • 1/4 teaspoon nutmeg powder
  • Zest of an orange
  • Bread scrapers are a must.

Instructions

  • Step#1- In a saucepan on medium heat bring to a boil the honey and the sugar.
  • Step#2- Once the sugar has melted it’s ready (this is very quick),
  • Step#3- On a work, surface add all the other ingredients, and form a well.
  • Step#4- Add your hot honey and fold in the flour using your scrapers.
  • Step#5- Form a dough and if it’s very sticky just add a little more flour.
  • Step#6- Sprinkle a little sugar on the work surface.
  • Step#7- Make small rolls and shape like the letter S. That’s where the Susamielli name comes from.
  • Step#8- Bake at 350 degrees on a cookie sheet lined with parchment paper.( Larger ones cook for 20 minutes or until golden color. Smaller ones in 15 minutes).
