Ingredients

For the steak

  • Let the steak stand at room temperature for half-hour
  • Salt to taste
  • Fresh cracked black pepper to taste

For the Chimichurri sauce

  • 1/4 cup fresh cut parsley
  • 2 cloves of garlic minced
  • 1/4 cup red wine vinegar (125 ml)
  • 1/2 cup Extra Virgin Olive Oil (250 ml)
  • Salt and pepper to taste

For the Spinach

  • 8 ounces fresh spinach (225 grams)
  • 1 1/2 tbsp butter (20 grams)
  • 1/4 cup grated Parmigiano Reggiano (26 grams)
  • Pinch of salt
