Roasted Potatoes with Garlic & olive oil | Patate Arrostite

Ingredients

  • 3 ibs baby potatoes of different variety if possible
  • 1 whole head of garlic in cloves but not peeled
  • 1/4 or more cup extra virgin olive oil
  • 2 sprigs fresh Rosemary
  • 2 sprigs fresh sage
  • Sea salt to taste
  • Fresh cracked pepper

Instructions

  • Step#1- Wash and cut the larger potatoes so they are all the same size and cook evenly.
  • Step#2- Place a large pot of water and salt on high heat and bring to a boil.
  • Step#3- Add your potatoes and boil for 4 to 5 minutes.
  • Step#4- Drain and set to dry on a kitchen towel
  • Step#5- On a large cookie sheet to fit the potatoes and Garlic in one layer, add your potatoes, drizzle the oil on, and salt and pepper. Remove needles from the rosemary sprig and cut the sage. Now combine everything.
  • Step#6- Place in oven at 375 degrees Fahrenheit (190 Celsius) for 30 minutes or until golden roasted.
