Ingredients
- 1 lb of pasta short cut – I used DeCecco corkscrew (cavatappi)- (450 grams)
- 5 oz crumbled feta cheese (140 grams)
- 1/4 cup extra virgin olive oil (55 ml)
- 1 medium red onion chopped
- 1 yellow bell pepper chopped
- 4 small red peppers chopped
- 2 small cucumber chopped
- 3 peperoncino peppers chopped
- 3 scallions chopped
- 18 kalamata pitted olives cut in half
- 18 green pitted olives cut in half
- 1/2 pound cherry tomatoes cut in half (225 grams)
- Salt and fresh cracked black pepper to taste.
- 6-8 fresh mint leaves chopped
- 3-5 basil leaves chopped
- 3 tbsp red wine vinegar
Instructions

1. In a large pot filled with salted water cook your pasta according to the package

2. Once pasta is cooked drain water, while it’s still hot add half of the oil.

3. Stir occasionally until the pasta has completely cooled.

4. Now add all the vegetables and remaining ingredients.

5. Let it chill and serve cold.

Wonderful get together meal, great for entertaining, picnics, or busy work nights.
A great recipe and can be doubled for large gatherings.
