Greek Pasta Salad

Ingredients

  • 1 lb of pasta short cut – I used DeCecco corkscrew (cavatappi)- (450 grams)
  • 5 oz crumbled feta cheese (140 grams)
  • 1/4 cup extra virgin olive oil (55 ml)
  • 1 medium red onion chopped
  • 1 yellow bell pepper chopped
  • 4 small red peppers chopped
  • 2 small cucumber chopped
  • 3 peperoncino peppers chopped
  • 3 scallions chopped
  • 18 kalamata pitted olives cut in half
  • 18 green pitted olives cut in half
  • 1/2 pound cherry tomatoes cut in half (225 grams)
  • Salt and fresh cracked black pepper to taste.
  • 6-8 fresh mint leaves chopped
  • 3-5 basil leaves chopped
  • 3 tbsp red wine vinegar

Instructions

  • 1. In a large pot filled with salted water cook your pasta according to the package
  • 2. Once pasta is cooked drain water, while it’s still hot add half of the oil.
  • 3. Stir occasionally until the pasta has completely cooled.
  • 4. Now add all the vegetables and remaining ingredients.
  • 5. Let it chill and serve cold.
  • Wonderful get together meal, great for entertaining, picnics, or busy work nights.

    A great recipe and can be doubled for large gatherings.
