Ingredients

Gnocchi alla Sorrentina (Gnocchi with tomato sauce and mozzarella) –

 Ingredients for the sauce:

  • 3 cans 28oz of San Marzano tomatoes or passata di pomodoro (800 grams x 3)
  • 1/4 cup extra virgin olive oil
  • 2 large cloves garlic whole
  • Fresh basil (If you don’t use it all it’s great sauce to use for other dishes).

Ingredient for the Gnocchi:-

  • 5 lbs Yukon potatoes (2.2 kilo) Idaho can work too
  • Do not use new potatoes
  • 3 1/2 cups flour and more to add as you work the gnocchi (450 grams)
  • 3 tsp salt
  • 1 egg

Final baking:-

  • Sauce
  • Gnocchi
  • 1 lbs mozzarella(500grams)
  • 1/2 cup parmigiano reggiano cheese grated
  • Fresh basil chopped 1/4 cup
