Gnocchi alla Sorrentina (Gnocchi with tomato sauce and mozzarella) –
Ingredients for the sauce:
- 3 cans 28oz of San Marzano tomatoes or passata di pomodoro (800 grams x 3)
- 1/4 cup extra virgin olive oil
- 2 large cloves garlic whole
- Fresh basil (If you don’t use it all it’s great sauce to use for other dishes).
Ingredient for the Gnocchi:-
- 5 lbs Yukon potatoes (2.2 kilo) Idaho can work too
- Do not use new potatoes
- 3 1/2 cups flour and more to add as you work the gnocchi (450 grams)
- 3 tsp salt
- 1 egg
Final baking:-
- Sauce
- Gnocchi
- 1 lbs mozzarella(500grams)
- 1/2 cup parmigiano reggiano cheese grated
- Fresh basil chopped 1/4 cup
