Ingredients
- 4 ibs of mixed summer fruits such as strawberry, blueberries, pineapple, mango, grapes, honeydew melon, blackberries, and cantaloupe.
- Cut up in cubes the larger fruit. (1800 grams)
- Wood skewers
- 8 oz Sour cream mixed with a little sugar (225 grams)(optional)
- Strawberry syrup (optional)
- Lemon curd
- Sponge cake
- 1 stick of butter softened (113 grams)
- 2Â eggs at room temperature
- 3/4 cup granulated sugar(155 grams)
- 1/2Â sour cream or Greek yogurt
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 1 1/4Â all-purpose flour
- 1 tsp lemon extract
- Zest of a lemon

Step1# – Remove the paper from your softened butter you can use it to grease the baking sheet.

Step2#- This cake can be mixed by hand and that’s how I make it. Make sure butter is very soft.

Step#3- Mix your dry ingredients and sift and set aside.

Step#4- In a large bowl using a whisk start whisking butter and add your sugar. Whisk for about 3 minutes.

Step#5- Now add your eggs one at a time and keep whisking.

Step#6- Time for the sour cream and continue whisking for about 2 minutes. The mixture will be light and fluffy.

Step#7- Spread on your prepared cookie sheet (13 x 18) and bake at 350 for about 20 minutes until golden.

Step#8- Cool completely then cut the sponge cake in cubes and between 2 cubes put a little of the lemon curd.

Step#9- Now take your skewers and thread with the fruit. In between fruit add the cubes of sponge cake too.

Step#10- Serve kebabs on a tray with strawberry syrup and sour cream mixed with a little sugar.
