for Sausage Pasta with Butternut Squash

(Pappardelle con salsiccia e zucca):-

  • 5 tbsp Extra Virgin Olive Oil
  • 1 medium onion chopped
  • 1 clove of garlic minced
  • 12 ounces chicken sausage or pork sausage (340 grams)
  • 1 pound butternut squash (450 grams)
  • 1/2 cup white wine (125 ml)
  • 6 leaves of fresh sage
  • 1 tsp salt plus more to salt pasta water
  • 1/2 cup of Parmigiano Reggiano (40 grams)
  • 1 pound of Pappardelle or your favorite pasta (450 grams)
