Ingredients
For Chicken:-
- 8 whole legs that you can cut in 2 making 8 legs and 8 thighs
- Bread crumbs about 4 cups
For the olive oil coating:-
- 4 tbsp extra virgin olive oil
- Juice of half a lemon
- Salt and fresh cracked pepper to taste
For the Mayonnaise coating:-
- 2 tablespoon of mayonnaise
- Juice of half a lemon
- Salt and fresh cracked pepper to taste
Side dish:-
- 1 lb mushrooms
- 1 clove of garlic sliced
- 2 tablespoon of extra virgin olive oil
- Salt and fresh cracked black pepper to taste fresh parsley to garnish
Instructions

1. Using a paper towel, grab the chicken skin, and pull off.

2. There is a small indentation between the leg and thigh meat, cut right through that making 2 pieces.

2. Choose which coating you will be making and combine the ingredients in a large bowl.

3. Now add your chicken and coat evenly.

4. One by one dip the chicken in the bread crumbs and coat evenly.

5. On a large cookie sheet place, all your chicken in a row. Cook in a 400 degrees Fahrenheit (200 Celsius) until golden. Usually 45 to 55 minutes.

6. While the chicken is cooking, rinse yo, ur mushroom, and with a wet paper towel, remove any soil. Do not soak mushrooms in water.

7. Slice the mushrooms as in a sauté pan on high heat let them release water.

8. Once water released and evaporated, add your oil, garlic, and chopped parsley.
Mushrooms are ready!
