  • 1 lbs Pappardelle or your favorite pasta 450 grams
  • 1/2 cup Parmigiano Reggiano 40 grams
  • 5 tbsp Extra virgin olive oil
  • 1 medium Onion chopped
  • 1 clove Garlic minced
  • 1 lbs Butternut squash 450 grams
  • 1/2 cup White wine 125 ml
  • 6 leaves Fresh sage
  • 1 tsp Salt More to salt pasta water
